Kitchen Fun - Lemon Posset

Whenever I read a book, apart from the actual plot and the central characters, I also focus on any kind of literature, media or food references in the book. Later I go back and check on them to see if they could become potential blog posts for me. And that is how I came across Lemon Posset too.

While reading the book, Clockwork Princess, final book in The Infernal Devices trilogy by Cassandra Clare, I noticed a few old British dishes mentioned. Of all of them that Clare mentions in the book, Lemon Posset caught my attention.

One of her characters, Sophia, makes a Posset for another of her characters, Gideon, while he was healing from his injuries. Originally as the author had used it, Posset was made in Middle Ages as a remedy for cold and other minor ailments, and other times used as a sleeping-aid. However, it has since become an easy dessert with lemon, honey or wine flavors. 

After checking a few recipes online, I figured it was easy enough to try. And so here we have a Lemon Posset for your treat.


1) Large Lemons - 2

2) Heavy Cream - 2 Cups

3) Fine Sugar - 2/3 Cup

Preparation Steps:

1) First grate zest from the two Lemons.

2) Then squeeze the juice from both of them. It should give you approximately 1/2 cup in total.

3) In a small saucepan, mix the Lemon Juice, Zest and Sugar; and stir well. On very low flame, let it simmer for a little while and put it aside.

4) In another saucepan, boil the Heavy Cream, on very low flame.

5) Remove Heavy Cream from flame, and gently fold the Sugar and Lemon Juice mixture into it.

6) Let the Posset cool a little. Pour into ramekins or glasses. I poured them into small plastic containers so I can use them one at a time.

7) Leave it out until it's cooled completely.

8) Refrigerate for at least five hours or till it becomes silky thick cream like texture.

9) Remove from refrigerator right before serving. Add a dash of fresh seasonal berries.

You can make your own version of Posset by adding flavors such as Vanilla or Chocolate; or Wine for a more alcoholic version; and your choice of nuts as well. Go on an adventure for your taste buds in your kitchen with Posset, a simple dessert that can be filled with complex flavors. 


1) If you want to squeeze the maximum juice out of lemons, microwave them for 30 seconds; or soak in very hot water for 3 to 5 mins.

2) Don’t boil the Heavy Cream on high flame or it will break it.

3) If you want the Posset a little less tart, filter the Sugar and Lemon Juice before pouring it into the Heavy Cream.

4) I recommend Raspberries if you can as they pair perfect with this version of Posset.
