05/11/2012 - Aloo Methi Curry / Potato Methi Curry - I generally dont use Potatoes in my cooking mostly cause they are too hard to burn, but they cant be avoided completely either. One needs these carbs once in a while for ur body to have a balance of all nutrients. Leftover Methi leaves and one Potato was enough for me to make this simple curry.
Recipe: Heat Oil in a pan. Add 1 tsp of Cumin Seeds, 2 to 3 Crushed Red Chilis and one large Garlic chopped finely along with a pinch of Turmeric. Once they fry well add one medium Tomato (chopped finely), Salt and Red Chili Powder (per your taste) and mix well. Saute until Tomatoes are softened then add chopped Potato (one chopped into bite size pieces). Cook until Potatoes are half-cooked. Now add chopped Methi Leaves (one small cup). Stir well and cook under low flame until all the veggies are cooked well. Serve hot with Rice or Roti.
