05/04/2012: Kakarakaya Chintapandu Kura / Bitter Gourd Tamarind Curry - Another hand me down recipe from a friend who calls it "The Bachelor's Version of Bitter Gourd Curry". His story is that once someone in their room bought this vegetable and no one knew how to cook. He vaguely remembered what ingredients his mom had put in the curry that she used to make. They took a spin on that vague memory and voila! they have a new recipe for the vegetable. And certainly tasting yummy too!




Recipe: Cut Bitter Gourd to bite size pieces. Boil them in Water mixed with Tamarind Paste until they soften a little. This will reduce the bitterness of the vegetable. Filter and rinse the Bitter Gourd pieces, keep them aside to cool. In a pan heat Oil, add Spices (Mustard Seeds, Jeera Seeds and Urad Dal), pinch of Turmeric, few Curry Leaves, few sprigs of Cilantro and Hing / Adafoetida. Once the Spices fry well, add Onion (1 medium chopped finely). When the Onions turn golden brown, add the cooked Bitter Gourd pieces. Stir well, then add Salt per taste, Red chili powder as per the spiciness you prefer and 1 tsp of Sugar. Mix well and simmer for few mins until the flavors mingle well. Sprinkle Coconut Powde, stir once and remove from flame. Serve with Rice or Roti.
